Fresh Mushroom Salad

Ingredients

1 lb fresh white mushrooms
1/4 cup Freshly squeezed lemon juice
1/4 cup chopped parsley
1/2 cup olive oil
1 pinch salt and pepper, to taste
4 cups mixed salad greens (chicory, endive and Boston lettuce)

Preparation

1. Trim the stems and wipe the mushrooms with damp paper toweling. Slice the mushrooms through caps and stems into very thin slices.

2. Pour the lemon juice over the slices and add the parsley, oil, salt and pepper. Chill the mushrooms.

3. Toss mushrooms and marinade with the greens and serve.
