Yummy Banana Cake

Ingredients

1/2 cup butter
1-1/4 cups sugar
2 whole eggs
1 tsp baking soda
4 tbsp sour cream
1 cup banana pulp, mashed
1-1/2 cups cake flour
1/4 tsp salt
1 teaspoon vanilla extract

Preparation

Preheat oven to 350°F. Cream butter and sugar until light and fluffy.Add eggs, until just combined. Scrape the bowl.

Add the baking soda to the sour cream and mix together before adding to the mixer. Add the vanilla and mix until combined. Add the flour and salt next and mix until just combined. Be careful not to overmix. (Over mixing will make the bread tough.)

Pour the batter into a greased and floured 8-inch square or 9-inch tube pan. Bake for 35 to 45 minutes. Test the center with a toothpick before removing from the oven. It should come out clean.
