Strawberry Biscuits

Ingredients

2 pints Fresh strawberries, halves
1 cup sugar
1 tbsp cornstarch
4 tbsp unsalted butter, barely melted
2 cups all-purpose flour
3 tbsp sugar
3 tsp baking powder
1/2 tsp salt
1/2 cup very hard butter
1/3 cup milk

Preparation

Rinse, drain, and hull the berries, twisting out the cores with the leaves and stems. Cut them in half. (For larger berries, cut into quarters) Mix the berries with the sugar and cornstarch then pour into a shallow glass or china baking dish. Drizzle the melted butter over the berries.

Preheat oven to 425 degrees F.

Food processor method for the dough: Pulse the flour, sugar, baking powder, and salt together a few times. Chop the butter into about eight sections and add it to the dry ingredients. Pulse on and off until the butter is the size of small peas. Turn the mixture into a bowl, add the milk, and blend with a spoon. If you don't have a food processor, cut the butter into the flour the old-fashioned way with by using a fork. Drop the dough in 6-8 chunks with a spoon onto the berry surface. Leave the dough looking rough so they will bake into golden-brown spiky biscuits. Bake in the center of the oven for 20 minutes; cover with loose foil if the biscuits brown too fast. Serve hot or warm, with plain or whipped cream.
