Chive & Potato Scones

Ingredients

1 lb. potatoes
1 cup all-purpose flour, sifted
2 tbsp olive oil
2 tbsp snipped fresh chives
1 pinch salt
1 pinch black pepper

Preparation

Peel the potatoes and cook them in a large pan of boiling salted water for 20 minutes or until tender, then drain thoroughly. Return the potatoes to the pan and mash them. Preheat a griddle or heavy frying pan.

Add the flour, olive oil and snipped chives, with a little salt and pepper, to the mashed potato. Mix to a soft dough.

Roll out the dough on a well-floured surface to a thickness of 1/4 inch, and stamp out rounds with a 2-inch plain cookie cutter. Lightly grease the griddle or frying pan.

Cook the scones in batches over low heat for about 10 minutes, turning once, until golden brown on both sides. Serve the scones immediately, with butter.
