Sun-Dried Tomato & Spinach Pasta

Ingredients

12 oz pasta
1 cup unsalted butter, cut into pieces
2 whole Garlic cloves, minced
1/4 cup chopped walnuts
1/2 cup drained oil-packed sun-dried tomatoes, cut into 1/4-inch-wide strips
1 pinch nutmeg
2 cups packed whole baby spinach leaves, washed if necessary and patted thoroughly dry
2 oz feta cheese, crumbled
1 pinch salt
1 pinch black pepper

Preparation

Bring a large pot of water to a boil. Add the pasta and cook until al dente, following the manufacturer's suggested cooking time.

A few minutes before the pasta is done, melt the butter in a large skillet over medium heat. Add the garlic and sauté for about 1 minute. Then, add the walnuts and sauté until they darken slightly in color and smell toasty, about 1 minute more.

Add the sun-dried tomatoes to the skillet and sauté until they are heated through, about 1 minute. Sprinkle in the small pinch of nutmeg. Finally, just before the pasta is done, add the spinach and stir continuously just until the leaves barely begin to wilt, about 30 seconds more.

Drain the pasta and toss with the sauce and the crumbled feta cheese, seasoning to taste with salt and pepper. Serve immediately.
