Aztec Corn Dish

Ingredients

2 cups zucchini, sliced unpeeled
1/2 cup onion, chopped
1/2 cup green bell pepper, chopped
1/2 cup water
1 1/2 cup red-ripe tomatoes, peeled & chopped
1 1/2 cup frozen corn kernel, thawed
1/4 tsp black pepper
1 tsp chili seasoning

Preparation

In a large skillet sprayed with cooking spray, sauté zucchini, onion, and green pepper for 2 to 3 minutes.

Add water. Mix well to combine. Cover and cook over medium-high heat for 5 minutes, stirring occasionally.

Stir in tomatoes, corn, black pepper, and chili seasoning. Re-cover and continue cooking for 5 to 6 minutes or until vegetables are tender, stirring occasionally.
