Buttermilk Pound Cake

1/3 cup Butter, softened, softened
1/2 cup raw honey or pure maple syrup
1/3 cup buttermilk
2 cups whole-wheat pastry flour
3 tsp low-sodium baking powder
8 whole eggs
1/8 tsp sea salt
1 tsp grated lemon rind or vanilla

Preparation

Combine all ingredients at one time. Mix for 5 minutes until smooth.

Pour into a greased and floured 9 x 5 inch loaf pan. Bake 30 to 40 minutes at 350°.
