Chive & Potato Scones

  • Peel the potatoes and cook them in a large pan of boiling salted water for 20 minutes or until tender, then drain thoroughly. Return the potatoes to the pan and mash them. Preheat a griddle or heavy frying pan.
  • Add the flour, olive oil and snipped chives, with a little salt and pepper, to the mashed potato. Mix to a soft dough.
  • Roll out the dough on a well-floured surface to a thickness of 1/4 inch, and stamp out rounds with a 2-inch plain cookie cutter. Lightly grease the griddle or frying pan.
  • Cook the scones in batches over low heat for about 10 minutes, turning once, until golden brown on both sides. Serve the scones immediately, with butter.
