Sun-Dried Tomato & Spinach Pasta
- Bring a large pot of water to a boil. Add the pasta and cook until al dente, following the manufacturer's suggested cooking time.
- A few minutes before the pasta is done, melt the butter in a large skillet over medium heat. Add the garlic and sautÃ© for about 1 minute. Then, add the walnuts and sautÃ© until they darken slightly in color and smell toasty, about 1 minute more.
- Add the sun-dried tomatoes to the skillet and sautÃ© until they are heated through, about 1 minute. Sprinkle in the small pinch of nutmeg. Finally, just before the pasta is done, add the spinach and stir continuously just until the leaves barely begin to wilt, about 30 seconds more.
- Drain the pasta and toss with the sauce and the crumbled feta cheese, seasoning to taste with salt and pepper. Serve immediately.
