Garlic Veggie Frittata

  • In a bowl beat eggs and 1/8 teaspoon pepper; set aside. In a 10-inch broilerproof or regular skillet cook onion and garlic in margarine or butter till tender. Stir in chopped vegetables or meat.
  • Pour egg mixture into skillet over vegetables or meat. Cook over medium heat. As mixture sets, run a spatula around edge of skillet, lifting egg mixture to allow uncooked portions to flow underneath. Continue cooking and lifting edges till egg mixture is almost set (surface will be moist).
  • Place broilerproof skillet under the broiler 4 to 5 inches from the heat. Broil for 1 to 2 minutes or till top is just set. (Or, if using a regular skillet, remove skillet from the heat; cover and let stand 3 to 4 minutes or till top is set.) Sprinkle with Parmesan cheese. Cut into wedges.
  • Microwave directions: In a 9-inch pie plate combine onion, garlic, and margarine. Micro-cook on 100% power (high) for 1 to 2 minutes or till onion is tender, stirring once. Stir in vegetables or meat. (If vegetables or meat are cold, cook mixture on high about 1 minute or till hot.) In a bowl beat together eggs and pepper. Pour into pie plate over hot vegetable or meat mixture. Cook on high for 3 to 5 minutes or till eggs are set but still shiny, lifting cooked edges every minute and letting uncooked portions flow underneath. Sprinkle with Parmesan cheese. Let stand for 5 minutes. Cut into wedges.
